Mediterranean Green Bean Salad

Mediterranean Green Bean Salad


Total time:  25 minutes
Makes 8 servings

Ingredients:

2 cans (14.5 oz. ea.) Cut green beans, drained
3 T. Extra virgin olive oil
3 T. fresh-squeezed lemon juice
1 clove garlic, finely chopped
1 t. fresh oregano, finely chopped or 1/2 t. dried oregano
1/2 t. salt
Dash of pepper
1/2 c. red onion, thinly sliced
1/2 c. sliced olives
1/2 c. feta cheese, crumbled

Instructions:

In a bowl combine oil, lemon, garlic, oregano and salt and pepper.  Mix well.
In serving bowl combine 2 cans well-drained cut green beans, onion and olives.
Pour dressing over the ingredients; sprinkle crumbled feta cheese on top.
Chill until serving.
